Sweet & Sour Chicken

This is a one-pot wonder perfect for the busiest time of year or for any day you need an extra helping hand. This came from Kraft Food & Family. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
1 onion, chopped
1 carrot, chopped
1 celery, chopped
1 green pepper, chopped
1 red pepper, chopped
1 lb boneless skinless chicken thighs, cut into bite pieces
1/2 cup kraft catalina dressing
1/2 cup soy sauce
1/2 cup brown sugar
1 tablespoon grated ginger
8 ounces canned pineapple chunks, reserving juice
minute white rice, cooked
Directions:
1. Place all vegetables in bottom of slow cooker reserving peppers. Top with chicken thighs.
2. Add dressing, soy sauce and brown sugar with ginger and pineapple juice, reserving pineapple.
3. Cover and cook on LOW for 7-8 hours or HIGH for 3 1/2-4 hours. During last 30 minutes of cooking, add pineapple and peppers. Serve over hot rice.
