Sweet Samosa-samboosek

This is the Middle Eastern version of the Rugelach, It is called Samosa, Samboosek or Atayef and it is so famous in all Arab countries.
Ingredients:
500 grams flour
1/2 cup ghee, or soft butter
1 tsp mahlab (a kind of middle eastern spice, if you can’t find, just use 1/2 tsp cinnamon or nutmeg).
1-1/2 cups milk
1 cup sugar

400 grams walnuts, crushed
1/2 tsp cinnamon
3 cups syrup, recipe follows

few lemon drops
2 cups vegetable oil
Directions:
1. Make the syrup first:
2. Heat sugar and water over medium heat till sugar is dissolved, then boil for 8-9 minutes add the lemon juice and let it cool. Syrup will thicken while cooling.
3. Rub flour and ghee or butter; add Mahlab or the kind of spice you use and half of the sugar .Make a hole in the center of the batter; pour in the milk, mix all till batter is holding it’s shape. Mix filling ingredients with the rest of the sugar.
4. Sprinkle some flour over the work surface, roll out the dough over it to a 1/2 inch thick, cut with a rounded cookie cutter. Place a little of the filling on each circle of dough and fold the circles into two. Use a small fork to seal the edges of each piece.
5. Heat the 2 cups oil till the frying point over medium heat; gently slide each peace of samousa and fry each side for 3-4 minutes till golden brown. Drain for a second and dip in cooled syrup for 2 minutes. Serve warm or cold.
