Ingredients:
1/6 cup quinoa
1/3 cup water
1 cup nonfat milk
1 tablespoon flax
1 tablespoon dried apricots
1 teaspoon maple syrup
1 cinnamon to taste
1 teaspoon chopped almond
Directions:
1. Bring the quinoa and water to a boil. Reduce heat to
2. simmer; cover and cook until all water is absorbed (10-15 minutes).
3. Combine 1/2 cup cooked quinoa with 1 cup nonfat milk in saucepan over medium-low heat.
4. Simmer until slightly thickened and add 1 tbsp ground flax. Add cinnamon and pure maple syrup to taste. Add 1 tbsp dried apricots or dried fruit of choice. Top with chopped almonds.
