Sweet Potatoes With Pecans and Blue Cheese

Ingredients:

  • 1 small onion
  • 4 tbsp olive oil
  • 1 tbsp butter
  • 1/3 cup pecans
  • 1 1/2 tsp honey
  • 1 garlic clove
  • 2 tbsp blue cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Peel sweet potatoes and cut into thin wedges.
  2. Peel and chop onion.
  3. Preheat oven to 375 degrees.
  4. In 15 x 10 pan place potatoes, onion and drizzle with 2 T olive oil.
  5. Salt and pepper to taste.
  6. Bake for 30-35 minutes, stirring once.
  7. Meanwhile, in a skillet, melt butter over medium heat, stir in pecans, brown sugar and 1/4 t salt.
  8. Cook and stir about 3 minutes until pecans are coated with sugar.
  9. Remove from heat and let cool on foil.
  10. For dressing:.
  11. Whisk together honey, vinegar, garlic, 1/4 t salt, 1/4 t pepper.
  12. Slowly whisk in remaining olive oil until combined.
  13. Whisk in 1 T blue cheese.
  14. Transfer potatoes and onions to serving plate.
  15. Drizzle with dressing and remaining blue cheese.
  16. Sprinkle with pecans.
