Sweet Potatoes With Lime Chili Dust

a Bobby Flay recipe. I adapted it very slightly for indoor cooking as I thought the sweet potatoes were too soft and was afraid I'd lose them through the grill grates. Read more . Enjoy.
Ingredients:
4 sweet potatoes, unpeeled (the recipe says sweet potatoes but i always buy the reddest yams i can find - those are the sweetest)
2 t. finely grated lime zest
1 t. kosher salt
big pinch of cayenne pepper
olive oil pam
Directions:
1. Par cook the potatoes in a pot of water until they are fork-tender; let cool.
2. While potatoes are cooking, mix the lime zest, salt and cayenne pepper well. Set aside.
3. Preheat oven to 450.
4. Slice each potato lengthwise into wedges. Spray a baking sheet with Pam, spread out the potatoes skin side down. Spray potatoes with Pam and sprinkle evenly with all the lime mixture.
5. Bake until lightly browned, maybe 20 minutes, and serve.
