Sweet Potatoes With Caramel Sauce

Caramel sauce makes this sweet potato casserole very special! In fact, it is just plain scrumptious!
Ingredients:
4 cups cooked sweet potatoes, mashed
3/4 cup brown sugar, firmly packed
1 teaspoon vanilla
1/2 cup half and half
1 cup chopped pecans
caramel sauce
1 cup sugar
1 stick unsalted butter
1/2 cup half and half
1 teaspoon vanilla
pinch of salt
Directions:
1. In large bowl, combine potatoes, sugar, vanilla, and half and half
2. Spread the mixture into a buttered 1-1/2 quart casserole
3. Make a WELL in center of the potato mixture
4. Sprinkle with nuts
5. Bake at 350 degrees for about 20 minutes
6. CARAMEL SAUCE
7. In a saucepan or skillet, combine sugar and butter
8. Cook until sugar is golden brown
9. Gradually add the 1/2 cup half and half
10. Cook 2 minutes
11. Stir in salt and 1 teaspoon vanilla
12. Remove potatoes from oven
13. Pour sauce over the hot potato casserole just before serving
