Ingredients:
1 cup whole wheat flour
1 cup all purpose flour
1/2 cup packed brown sugar
2 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/8 tsp. ground cloves
1/2 tsp. salt
1 cup skim milk
2 egg whites
1 tablespoon canolia oil
1/2 cup finely grated raw sweet potatoes
1/2 cup choppe dried pears
1 -2 tbs. turbinado sugar
Directions:
1. Spray muffin tins with cookin spray
2. Preheat oven 375
3. combined whole wheat Flour and next 6 ingredients {whole wheat through to salt} in a mixing bowl
4. Combined egg whites milk and oil in seperate bowl whisk well
5. Make A well in center of dry ingredients pour wet ingredients into it
6. stir untill just well combined
7. gently fold in sweet potatoes and pears
8. Fill muffin tins 2/3 cup full sprinkle w ith Turbinado sugar
9. Bake 18-20 minutes untill center springs back makes 12 muffins
10. per muffin- 150 calories-1.5 grams fat-o mg chol- 4 gr protein-32 carbs-2 gr fiber -240 mg. sodium
