Sweet Potato With Chilli And Garlic

Ingredients:

  • 100 g of butter
  • 1 clove garlic

Directions:

  1. Peel and chop sweet potato into medium sized chunks and simmer in boiling water until cooked and just tender.
  2. Drain and mash sweet potatoes.
  3. Melt butter on gentle heat and infuse with finely chopped garlic and chilli while potato is cooking. (6 or 7 minutes infusing with do)
  4. Stir infused butter into the mashed potatoes and serve with grilled fish or chicken.
