Sweet Potato Scones

I am always looking for new ways to prepare sweet potatoes; these are unusual and really good! I wonder if pumpkin would work as well…
Ingredients:
1 cup flour
1/4 cup corn bran
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
3/4 cup shredded sweet potato
1/4 cup raisins (i like the golden ones)
1/3 cup buttermilk
1 1/2 tablespoons oil
Directions:
1. Mix together dry ingredients.
2. Add the sweet potatoes and raisins.
3. Add the buttermilk and oil.
4. With floured hands knead the mixture for about 2 minutes.
5. On a lightly floured surface, roll out the dough to 1/4 inch thickness.
6. Cut into 2 1/2 inch rounds.
7. Transfer to a lightly greased cookie sheet.
8. Bake at 475 for 6-8 minutes. Serve warm.
