Sweet Potato Pecan Pie

SWEET POTATO PECAN PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baxter Estate in Mabank, Texas in 1990.
Ingredients:
1 pound sweet potatoes cooked and peeled
1/4 cup unsalted butter
14 ounce sweetened condensed milk
1 teaspoon ground cinnamon
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg
1 prepared graham cracker crust
pecan topping
1 egg
2 tablespoons dark corn syrup
2 tablespoons firmly packed brown sugar
1 tablespoon melted butter
1/2 teaspoon maple flavoring
1 cup pecans
Directions:
1. Preheat oven to 425 then with mixer beat sweet potatoes and butter until smooth.
2. Add condensed milk, cinnamon, orange rind, vanilla, nutmeg, salt and egg and mix well.
3. Pour into crust and baker 20 minutes.
4. Prepare pecan topping by beating together egg, syrup, sugar, butter and maple flavoring.
5. Stir in nuts then spoon topping evenly over pie and bake 25 minutes longer then cool.
6. Garnish with orange zest and serve.
