Sweet Potato Leek And Ham Soup

Another winner from Janet Keeler, food editor of the St. Pete Times. Had a bunch of frozen cubed sweet potaotes and this soup was put together in a snap and it was filling, delicious and not sweet...just flavorful.
Ingredients:
1 cup cooked diced ham
1/2 tbsp of oil
1 large sliced leek
3 cups cubed peeled sweet potatoes
1 cup of chicken broth
2 cups of water
1 can fat-free evaporated milk
Directions:
1. Saute the ham in the oil in bottom of sauce pan.
2. Remove ham and set aside.
3. In ham flavored oil, saute the leek along with 1 tbsp of water until softened.
4. Add potatoes, water, broth, and fat free milk to pot.
5. Bring to boil and then reduce heat to simmer for 15 minutes until the potatoes are very tender.
6. Remove half of the soup and puree until smooth.
7. Add ham back into the soup.
8. Heat a minute and ladle and serve.
9. Garnish with chopped green onions (and chopped crispy bacon if you were me!)
