2 lbs sweet potatoes or 2 lbs yams
2 tablespoons matzo meal or 2 tablespoons flour
2 eggs

1 -2 teaspoon cinnamon (to taste)
1/4 teaspoon nutmeg
1/4 teaspoon clove
Directions:
1. Peel and grate sweet potatoes and remove any excess moisture.
2. Beat eggs and add one at a time, mixing well. See Note at end of instructions.
3. Add matzoth meal or flour and baking powder.
4. Add spices and mix well.
5. Heat oil until hot and put large spoonful for each pancake.
