A new and different way to eat sweet potatoes. This is a new twist on my Sweet Potato - Apple Casserole. I got so many rave reviews on Thanksgiving day about this great tasting dish. My recipe makes a lot so you can always cut the recipe in half.
Ingredients:
3 (40 ounce) cans sweet potatoes, drained
2 lbs apples
1/2 cup dried cranberries
1/2 cup brown sugar
2 teaspoons cinnamon
1 tablespoon lemon juice
1/2 cup butter or 1/2 cup margarine, melted
1/2 cup butter or 1/2 cup margarine
1 cup flour
1/2 cup brown sugar
1/4 cup sliced almonds
Directions:
1. Preheat oven 350°F.
2. Slice sweet potatoes 1/4 inch thick.
3. Wash and slice apples 1/4 inch thick. Put lemon juice on the apples.
4. Mix brown sugar, cinnamon and melted butter.
5. Alternate layers of sweet potatoes, apples, and cranberries, in a deep casserole dish. Put sugar mixture on top of each layer.
6. Bake 30 minutes.
7. While the casserole is baking it's time to mix the topping.
8. Cream butter, stir in flour, brown sugar, and almonds.
9. After baking for 30 minutes, take out of the oven and top with the toping. Put back in the oven and bake for another 20 to 30 minutes. Until golden.
