SWEET POTATO CHOCOLATE NUT CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kilgore Estate in Little Elm, Texas in 1988.
Ingredients:
4 ounces semisweet chocolate melted
1 teaspoon vanilla extract
3 cups all purpose flour
1-1/2 cups granulated sugar
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
2 cups mashed cooked sweet potatoes
1-1/2 cups oil
4 eggs
1 cup chopped nuts
Directions:
1. Butter and lightly flour a tube pan then mix melted chocolate together with the vanilla. 2. Sift together the dry ingredients and set aside. 3. In a large bowl beat the sweet potatoes and oil together then add eggs one at a time until blended. 4. Slowly add the dry ingredients and mix well then stir in the nuts. 5. Place 1/3 of the mixture in another bowl and stir in the chocolate mixture. 6. Alternate batters in pan then swirl through layers with a knife to get a marble effect. 7. Bake at 350 for 75 minutes then let cool for 10 minutes in pan. 8. Remove from pan and cool completely on a rack.
