Sweet Potato & Chilli Soup

Sweet potatoes this make a colorful and extremely satisfying soup - with a kick.
Ingredients:
1/2 ounce butter
1 onion, roughly chopped
1 red chili pepper, finely chopped (or a pinch of chili flakes)
1 teaspoon ground coriander
2 garlic cloves, crushed
1 1/2 lbs sweet potatoes, peeled and cut into chunks
3 1/2 cups vegetable stock
3 ounces gruyere, grated
1 pinch paprika (optional)
Directions:
1. Melt the butter in a large pan, add the onion, chili, coriander and garlic and cook for about 8 minutes until softened.
2. Add the sweet potato and cook for a few more minutes.
3. Add the stock, bring to the boil then simmer for about 10 minutes until the veg is soft.
4. Mash, or blend if you want a smooth soup.
5. Season and serve with a sprinkling of cheese and a pinch of paprika.
