This recipe comes from my mother, and I think she found it in a newspaper. It's a big hit at the holidays. My mom always makes it for Thanksgiving and Christmas dinner for our family, and whenever we spend the Holidays with my husband's family, they always request that I make it. We joke that it's sweet enough to have for dessert. Yum! (Prep time does not include time to boil and mash sweet potatoes)
Ingredients:
3 cups cooked and mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup milk
1/4 cup margarine, melted
1 teaspoon vanilla
1/2 teaspoon salt
1/4 cup margarine, melted
1/2 cup self-rising flour
1 cup brown sugar
1 cup pecans, chopped
Directions:
1. Mix together sugar, eggs, milk, melted margarine, vanilla and salt.
2. Blend well.
3. Pour into a greased oblong baking dish.
4. Make the topping by combining the melted margarine, brown sugar, flour and pecans.
5. Sprinkle the crumbly topping over the sweet potato mixture, spreading evenly.
6. Bake at 350 degrees for 30-45 minutes.
