Sweet Potato Bites

Ingredients:
1 lb sweet potato (2 inches in diameter)
2 tablespoons vegetable oil
1/3 cup sour cream
caviar
fresh chives
scallion, chopped
crystallized ginger
crumbled bacon
chopped fresh herb
Directions:
1. Preheat oven to 400. Scrub sweet potatoes and trim ends. Cut into 1/4 inch rounds.
2. Oil a jelly roll pan and arrange sweet potatoes in a single layer. Brush with oil.
3. Bake 15 minutes or until slices are golden brown on the bottom. Turn over and cook 10 minute longer.
4. Transfer potato slices to a serving plate and spoon or pipe about 1/2 teaspoon sour cream onto each.
5. Top with 1 or more toppings. Serve hot, warm or at room temperature.
