I was watching a TV show and saw a restaurant that served sweet potato biscuits. It just so happened I had some leftover mashed sweet potatoes. My wife was raised on biscuits and loved these. Good with butter and honey or as the base for a savory milk gravy.
Ingredients:
1 c mashed, cooked sweet potato. (i suppose canned would be fine but i have only used freshed)
1/2 c butter milk + 1/4 c spare
6 oz frozen butter
1 1/2 c all purpose flour + bench flour
1 t baking powder
1 t sugar
1 teas salt
Directions:
1. Preheat oven to 400 F
2. Combine the dry ingredients and mix well or sift together
3. Use a box grater and grate the frozen butter into the dry ingredients and gently mix to incorporate (beats using a pastry cutter)
4. Stir 1/2 c butter milk and the mashed sweet potatoes together until smooth
5. Add to the dry mixture and mix. The dough should just come together. Use the extra butter milk if needed adding a tablespoon at a time
6. Pat out into a rectangle 3/4 thick
7. Use a 2 1/2 or 3 biscuit cutter
8. Bake 15-20 minutes
9. Serve warm with butter and honey or jam
10. Also great as part of biscuits and gravy
