Sweet Potato Balls

A cute, different way to serve sweet potatoes, You can also use fresh, baked sweet potatoes/yams (instead of canned) to equal approx. 3 lbs.
Ingredients:
1 (40 ounce) can sweet potatoes, drained (or about 3 lbs baked, peeled and cooled fresh)
1/4 cup butter, softened
1/8 teaspoon salt
3 cups crushed corn flakes cereal
3/4 cup maple syrup
10 large marshmallows
Directions:
1. In a large bowl, mash sweet potatoes with butter and salt.
2. Hand roll into balls about 3 inches in diameter.
3. Roll the balls in the crushed cornflakes to coat them.
4. Place balls into lightly greased 13 x 9 baking pan.
5. Pour syrup evenly over tops.
6. Bake at 325 for about 25 minutes. Place a marshmallow on top of each and continue to bake for an additional 10-15 minutes.
