Sweet Potato and Pumpkin Soup

Ingredients:

Directions:

  1. Heat oil in large pan.
  2. Add onion,crushed chilli, sweet potato and pumpkin.
  3. Cook for 8- 10 minutes, stirring occasionally.
  4. Pour over stock, cover and simmer for 20- 25 minutes.
  5. Blend until smooth, adding evaporated milk.
  6. Garnish with coriander to serve.
