Sweet Potato and Ginger Pancakes (Can Be Gluten-Free)

It's a sweet potatoe pancake recipe that's mildly sweet, perfect for breakfast. I cook sort of free-form, in other words I throw ingredients together and see how it turns out. Therefore, the ingredient portions are approximate. Hope you enjoy them, I did.
Ingredients:
1 large sweet potato, grated
1 tablespoon of finely grated fresh ginger
1 egg
1 teaspoon baking powder
1/4 cup of preferred flour (i use brown rice flour)
1 teaspoon cinnamon
1/2 teaspoon cardamom
1 dash salt
oil
Directions:
1. - Mix all ingredients together in a medium sized bowl.
2. - Spoon unto preheated generously oiled pan and press into small patties.
3. - cook until lightly browned and flip over.
4. serve and enjoy.
5. I enjoyed them on there own but I could see these going really well with maple syrup.
