Sweet Potato and Canadian Bacon Hash

Ingredients:
4 cups diced peeled sweet potatoes (about 1 pound)
2 cups diced red potatoes (about 8 ounces)
2 tablespoons vegetable oil
1 cup diced canadian bacon (about 8 ounces)
1 cup chopped green bell pepper
2/3 cup chopped green onion
3/4 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon fresh ground black pepper
1/8 teaspoon grated whole nutmeg
1/4 cup reduced-sodium fat-free chicken broth
1 tablespoon cider vinegar
Directions:
1. Place potatoes in a saucepan, and cover with water. Bring to a boil. Reduce heat, and simmer 5 minutes. Drain.
2. Heat oil in a large nonstick skillet over medium heat. Add bacon; cook 4 minutes, stirring frequently.
3. Add bell pepper and green onions; cook 2 minutes, stirring frequently.
4. Add potatoes, salt, celery seed, pepper, and nutmeg; cook 4 minutes, gently stirring occasionally.
5. Stir in broth and vinegar. Toss gently until liquid is absorbed.
