Sweet Plantain Spring Rolls

These are really good! My best friend in Junior High School used to make these with her mom and used to bring me some for lunch. They are really crunchy and sweet so you can have these as an appetizer, snack or side dish. Read more . Variation: Omit the sugar and instead wrap the plantain slice with a slice of hard salami. Then wrap with the spring roll wrapper and seal. These turn out savory. They are different than the sweet ones but tasty too!
Ingredients:
3 ripe plantains (look for yellow plantains that have black marks all over, these are extremely sweet and soft)
12 spring roll pastry wrappers
1/2 cup water
1/2 cup of sugar (you might not need the whole amount so use a little at a time)
canola oil for frying
Directions:
1. Cut each plantain crosswise into three equal pieces and then slice each piece lengthwise into three more pieces
2. set up work area by placing spring roll pastry wrappers on one plate, sugar in small plate, water in little bowl and an empty plate or cutting board for rolling the spring rolls.
3. place one pastry wrapper on flat surface
4. roll 1 or two pieces of sweet plantain in sugar to coat
5. place plantain piece(s) on one corner of the wrapper, folding over that corner to cover the plantain
6. fold over the two adjacent corners, THIS SHOULD LOOK LIKE AN OPEN ENVELOPE WITH THE PLANTAIN BEING THE CONTENTS OF THE ENVELOPE.
7. roll the side with the filling over until it reaches the other corner
8. dip your fingers in the water and moisten the corner and press against the roll to seal
9. repeat these steps until you have about 12 rolls ( you may have plantain pieces left over or spring roll wrappers depending on the amount in package...feel free to make more!!!)
10. heat canola oil in small pan over medium heat
11. place rolls carefully in hot oil and cook on one side until light brown then turn to cook the other side (THESE BURN EASILY SO WATCH CAREFULLY)
12. REMOVE FROM OIL WITH SLOTTED SPOON AND DRAIN ON PAPER TOWEL
