Sweet Onion Dressing - South Beach

This house dressing is one of the most popular things on the menu at Joe's Stone Crab. This is for Phase 3. This came from The South Beach Diet Cookbook. I have not tried this.
Ingredients:
1/2 medium vidalia onion, roasted
8 garlic cloves, chopped
1/4 cup chopped parsley
2 tablespoons sugar
1/2 cup dijon mustard
2 cups extra virgin olive oil
1/4 cup white wine vinegar
1/2 cup water
1 teaspoon kosher salt
1 teaspoon black pepper
Directions:
1. Preheat the grill or preheat the oven to 400.
2. Grill the onion until light brown. Place in a food processor and pulse until finely chopped. Add the garlic, parsley, sugar, and mustard and process. Slowly add the oil. Add the vinegar, water, salt, and pepper and process until well-combined.
