Loadsof lemony flavor make this a special lemon bar.Serve them with fresh berries.
Ingredients:
for the crust
ingredients
1 cup all-purpose flour
5 tbs. margarine or butter melted
1/4 cup confectioners' sugar
1 tsp. minced lemon peel
2 tbs. skim milk
ingredients
for topping
1 cup granulated sugar or sweetener substitute
3 tbs. fresh lemon juice
2 tbs. all-purpose flour
1 large egg
2 egg whites
1/2 tsp. baking powder
confectioners' sugar for garnish
Directions:
1. 1.Preheat oven to 350º. Spray an 8” square baking pan with vegetable cooking spray.
2. 2.To prepare crust, in a medium bowl, combine flour, margarine, confectioners' sugar, and lemon peel. Mix well. Pour in milk, stirring, until dough can be gathered into a ball.
3. 3.Pat dough evenly into bottom and 1/4” up the sides of prepared pan. Bake until crust iss golden, about 20 minutes. Place pan on a wire rack and cool for 5 minutes.
4. 4.To prepare the topping, in a medium bowl, combine sugar, lemon juice, flour, egg, egg whites, and baking powder. Mix well.
5. 5.Pour topping over prepared crust. Bake until topping is set, about 20 to 25 minutes. Place on a wire rack and cool completely. Cut into 2-inch squares. Dust with confectioners' sugar.
6. Tip: For best results, thoroughly chill them first. Cold bars are less likely to crumble.
