Sweet Glazed Tofu Cutlets

A simple, pleasing way to prepare tofu. The result is a crisp, salty-sweet rendition to be served alongside Asian-style rice or noodle dishes.
Ingredients:
1 lb extra firm tofu
1 tablespoon light olive oil
1 teaspoon sesame oil
2 tablespoons honey or 2 tablespoons maple syrup
2 tablespoons soy sauce
2 tablespoons sherry wine or 2 tablespoons dry red wine
2 scallions, diagonally sliced for garnish
Directions:
1. Cut tofu crosswise into 1/4 thick slices. Blot them briefly between paper towelsor clean tea towels.
2. Comine the oils, honey, soy sauce, and sherry or wine in a small bowl. Pour the mixture into a wide skillet and slowly heat. Arrange the tofu slices in the skillet, then flip them carefully all at once so that they will be coated with the sauce on both sides.
3. Fry the tofu over moderately high heat uintil the underside is nicely golden and crisp, then flip again and fry until the other side is crisp. Remove the tofu cutlets to to a servng platter and scatter with scallion slices. Serve warm.
