Sweet Ginger Mahi Mahi

Nice light marinade for any meaty grilled fish.
Ingredients:
2 8 oz mahi mahi fillets
3 tbsp honey (or maple syrup)
3 tbsp soy sauce
3 tbsp balsamic vinegar
1 tsp grated fresh ginger root
1 clove garllic, crushed
4 tsp olive oil
Directions:
1. Combine all ingredients except fish in a large freezer bag
2. Add fish; turn to coat and refrigerate for 20 min
3. Heat grill to Medium heat and brush lightly with olive oil
4. Remove fillets from marinade (reserve liquid) and grill for 10-12 min, turning once-until fish flakes with a fork.
5. Pour reserved marinade into a small skillet and heat over medium flame until mixture reduces to a thick glaze, 2-3 minutes
6. Spoon glaze over fish and serve immediately
7. Delicious!
