Sweet Fig Paste

Use as a dessert by istself - garnish with a dollop of cream or use as a pastry filling for cookies, pastries etc.
Ingredients:
500 gr. dried figs, chopped ( a little over a pound )
1 1/4 cup sugar
1/2 tsp. ground cinnamon
juice of 1 large lemon
Directions:
1. Put the figs and lemon juice in a heavy saucepan and cover with water.
2. Let stand for 2 hours and then, on a low flame, heat gently.
3. Stir occasionally until the figs are tender.
4. Add the sugar, cinnamon and continue to cook on a low flame until the figs are glazed and the mixture has the consistency of jam.
5. Remove from the heat .
6. Let cool before refrigerating.
7. Serve cold
