Sweet Cranberry Raisins Rice Pudding

A delicious pudding with just enough flavor.
Ingredients:
1 1/2 cups medium grain rice or 1 1/2 cups long grain rice
3 cups water
1/2 teaspoon salt (heaping)
8 cups whole milk (i use 2%)
3 teaspoons vanilla
3 teaspoons cinnamon
1 cup dried cranberries
1 cup raisins
1 1/2 teaspoons honey
1 cup ricotta cheese
1 cup apple cider
Directions:
1. Boil rice, water and salt for 15 minutes make sure your pot is covered.
2. Add milk, vanilla, cinnamon, cranberry, raisins, honey and ricotta cheese. Cook in oven at 250 for 20 minutes.
3. Cool until warm and serve.
