Sweet Chilli Prawn Patties

Delicious inclusion in a seafood platter, anti pasto or just as an entree/ starter. When I do this at home I use Chilli Wine jelly for the glazing, it comes from the Disaster Bay Chilli company in Eden NSW and is brilliant. If not from Australia substitute sweet chilli sauce for a similar taste
Ingredients:
400 g green prawns, peeled
2 garlic cloves, diced finely
2 cm ginger, diced finely
1/2 bunch coriander leaves, picked and chopped finely
1 tablespoon lemongrass, finely diced
1/2 teaspoon fish sauce
1 egg
1 tablespoon plain flour
salt and pepper
2 tablespoons sweet chili sauce
Directions:
1. Mince prawns in blender or food processor.
2. Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
3. Add egg and stir through.
4. Season to taste.
5. Check consistency and add flour as required to stiffen up mixture.
6. Make into small patties using 1 teaspoon of mixture at a time.
7. Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
8. Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
9. Serve while hot.
