Sweet Chicken Soup

I was treated to many different forms of chicken soup when I was a child. This is one of my favorite recipes as its a bit sweeter than most chicken soups due to the large amount of carrots. A small head of cabbage and squash are added too which adds a nice fragrance and texture to the finished soup. Read more . This soup does not have any onions or garlic in it. It might not be the best looking soup in the world but its one of the tastiest. (The picture is of this soup with some of the liquid removed.)
Ingredients:
1 whole chicken
1 small head of cabbage, chopped coarsley
2-3 pounds of baby carrots or 2 large bags of frozen carrots or both
1 large bag of frozen chopped green beans
1 frozen box of squash or 2 cups of your favorite squash, cooked and cubed or one small can of plain pumpkin (not the pie filling)
salt and pepper to taste
Directions:
1. In a very large pot, add at least 8 cups of water and bring to a boil.
2. Add the whole chicken and cover the pot. (Do not add any salt.)
3. Cook for at least 1 1/2 hours and check chicken for tenderness.
4. If you can pull off a leg, the chicken is done.
5. Remove the chicken from pot and place in a large bowl to cool.
6. Bring the water back to a boil and add the rest of your ingredients.
7. Bring back to another boil and reduce heat to simmer.
8. Cook for one hour.
9. Meanwhile, after the chicken has cooled, remove the meat from the bones and shred or chop the meat.
10. After your vegetables have cooked completely, add the chicken back to the pot and stir.
11. The soup is now ready to be served.
12. You can have everyone season their own soup with the salt and pepper at this point.
13. -CROCKPOT DIRECTIONS-
14. Use a bag of frozen chicken tenderloins or 2 pounds of cut up chicken. Add those to your crockpot, layer the vegetables over and cover with water and turn on low for at least 8 hours.

16. If you wish to add noodles or rice to the soup, do not add it to the pot. Add a 1/2 of cooked noodles or rice to your individual bowls and ladle soup over that.
17. *You can add sliced mushrooms, corn, celery or some chopped green dell peppers without compromising the natural sweet flavor of the soup.
18. -This is great served as a main course with a salad and some hot crispy rolls.
19. ***I also have to add that this soup is great for those of you who are cooking for your dogs. Add a scoop or two of this over some dried dog food and mix it well. I feed mastiffs and they love it!
