Ingredients:
1/2 cup boiling water
1/4 teaspoon salt
2 cups shredded carrots
1 tablespoon diet margarine
sugar substitute
1 teaspoon lemon juice
4 tablespoons parsley
Directions:
1. Bring water to boil in saucepan.
2. Add salt and carrots.
3. Cover pan and cook until water is evaporated (about 5 minutes).
4. Remove from heat.
5. Add margarine and sugar substitute to taste.
6. Toss with lemon juice and parsley.
7. Serve immediately.
