Ingredients:
1 cup skim milk
1 egg
3 tblsp margarine
1 cup carrots, grated
1/2 cup raisins
1 tsp cinnamon
1 tsp nutmeg
2 1/2 tsp baking powder
1/4 cup brown sugar
1 3/4 cup flour
Directions:
1. lightly oil mufin tin and preheat oven to 190 deg cel
2. Put the first 7 ingredients in a bowl and mix well
3. add the remaining ingredients and blend until just mixed
4. bake for 15 mins
