Light, cool salad for those hot summer nights. From Secrets of the Spas by Catherine Bardey.
Ingredients:
2 cups grated carrots
1/2 cup sweetened coconut
1/4 cup raisins
1/4 cup slivered almonds
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/4 teaspoon salt
pepper
Directions:
1. Place all ingredients in bowl and toss.
2. Season to taste with pepper and serve.
