Sweet Caprese Romaine Salad

Enjoy the summer tastes of Insalata Caprese in this chopped salad. Mozzarella string cheese subs for fresh mozzarella - fresh is best but I used what was available and avoided a trip to the grocery store! Although the recipes are not at all similar, the idea to use string cheese was inspired by Beautidiva's Cheaters Manicotti.
Ingredients:
chopped romaine lettuce (for one serving)
10-12 grape tomatoes
fresh basil leaves
2 sticks mozzarella string cheese
garlic & butter croutons (or your favorite flavor)
2 tablespoons balsamic vinegar
2 tablespoons white sugar
2 tablespoons canola oil
Directions:
1. wash & chop lettuce. dry in salad spinner or crisp in refrigerator.
2. mix vinegar, sugar, and oil until smooth and emulsified.
3. add halved grape tomatoes and torn basil. allow to marinate briefly.
4. chop the string cheese and combine with lettuce. pour dressing over lettuce, toss.
5. top with croutons and additional fresh basil.
