If you like banana bread, you will love these! When you find yourself with an abundance of ripe avocados (and are sick of guacamole), do try this simple pleasure of a recipe. I garnish mine with chopped walnuts. Read more The batter could certainly be turned into a cake, depending upon the pan used. The addition of 1/3 to 1/2 cup of semi-sweet chocolate chips are delicious folded in before baking, too.
Ingredients:
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1 cup sugar
2 large eggs
1 1/2 cups very ripe avocado, mashed or pureed
1 t. fresh squeezed lime juice
1/2 cup canola oil
1 heaping teaspoon vanilla extract
Directions:
1. Preheat oven to 350. Line muffin pan with papers, set aside. Sift all dry ingredients together (flour, baking powder, soda and salt), set aside.
2. Beat sugar and eggs until fluffy; stir in avocado, lime juice, oil and vanilla. Add wet ingredients to dry ingredients and mix just until combined. Spoon the mixture evenly into prepared pan. Bake 15 - 20 minutes or until tester comes out clean. Remove from tin and cool.
3. *If you want a lighter taste and texture, you can cut the amount of avocado back to 1 cup, but no less.
