Ingredients:
3 cups thinly sliced red onion
1 cup red wine vinegar
3 tablespoons sugar
1/4 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1/2 cup white vinegar
3 tablespoons coriander seeds, crushed
1 tablespoon olive oil
Directions:
1. Combine the first 5 ingredients; cover and refrigerate for 3 hours. Drain onion; place in a bowl. Stir in white vinegar, coriander, and oil.
