Sweet and Sour Chicken Stir-fry

Ingredients:

Directions:

  1. Stir together sauce ingredients.
  2. Place a wok over high heat.
  3. When wok is hot, add 2 tbsp peanut oil.
  4. When oil is hot, add garlic and chicken and stir fry until chicken is cooked (about 3 mins).
  5. Remove from wok and set aside.
  6. Pour remaining 1 tbsp oil into wok.
  7. When oil is hot, add onion and bell pepper.
  8. Stir fry until vegetables are tender crisp (about 2 mins).
  9. Add pea pods, stir fry about 1 minutes.
  10. Return chicken to wok.
  11. Stir sweet and sour sauce, pour into wok along with pineapple.
  12. Stir until sauce boils and thickens.
  13. Serve over hot cooked white rice.
