Sweet-And-Sour Cauliflower

Despite its Oriental-sounding name, this is an Italian dish. Taken from the Quick and Healthy Low Fat Cooking cookbook.
Ingredients:
1 garlic clove, minced
1 tablespoon olive oil
1 head cauliflower, separated into florets
1 large tomato, seeded and diced
2 1/2 tablespoons red wine vinegar
3 tablespoons pine nuts (toasted)
3 tablespoons golden raisins
Directions:
1. In a large non-stick frying pan over medium heat, saute the garlic in the oil for 1 minute.
2. Add the cauliflower, tomatoes and vinegar.
3. Cover and cook for 7 minutes.
4. Stir in the pine nuts and raisins.
5. Cover and cook for 2 minutes, or until the cauliflower is tender.
