Ingredients:
2 cups sliced carrot, 1/4 in length
1/2 cup sliced celery , 1/2 in length
8 oz canned pineapple tidbits (drain and reserve juice)
1 tbsp vinegar
2 tsp cornstarch
1 tsp low sodium soy sauce
1/8 tsp salt
2 tbsp butter or stick margarine
1/4 cup green onion, sliced
6 g (6 packets) equal sweetener or 1/4 cup equal spoonful
Directions:
1. Cook carrots and celery in medium saucepan in small amount of water about 8 minutes or until tender. Drain and set aside.
2. Add enough water to reserved pineapple juice to make 1/2 cup liquid. Stir in vinegar, cornstarch, soy sauce and salt. Cook in medium saucepan until liquid thickens.
3. Add butter, drained pineapple and onions. Continue stirring until heated. Add drained carrots and celery and cook about 2 minutes or until heated through. Stir in Equal.
