I used to serve this, when the boys were young. They would come home proud as punch with their catch of spotties , a small edible fish but not with much flavour. It was more a matter of quantity not quality. The ingredients of this dish are stronger than the taste of the fish, thus an ideal way to use up the prized catch. Easy to make and inexpensive.
Ingredients:
3 cups cooked flaked fish
1/4 cup brown sugar
1 teaspoon ginger
1 teaspoon curry powder
1 teaspoon mustard powder
2 tablespoons flour
1 cup tomato sauce
1 cup water
3 tablespoons vinegar
Directions:
1. Mix all ingredients together, except flaked fish.
2. Bring to the boil over a low heat until thickened.
3. Add flaked fish and simmer gently until heated through.
4. Serve on a bed of rice.
