Swedish Christmas Brown Beans

Traditional Christmas Eve dish for Swedes - sweet with just the right amount of sour.
Ingredients:
2 cups dried swedish brown beans
6 cups water
1 1/2 teaspoons salt
1/2 cup white vinegar
1/3 cup molasses
3 tablespoons brown sugar
2 tablespoons butter
1/2 tsp nutmeg
1 small cinnamon stick
Directions:
1. Pick over and rinse the beans.
2. Add the water and soak the beans overnight.
3. The next day, bring the beans and water to a boil.
4. Cover and simmer for 1 1/2 hours.
5. Add salt, vinegar, molasses, brown sugar, butter, nutmeg and cinnamon stick.
6. Stir to combine.
7. Simmer, uncovered, for 1 hour, or until the beans are tender.
8. The liquid should be saucy. - if too runny, turn up the heat for 10 minutes or so until desired consistency is reached..
9. Remove the cinnamon stick.
10. Serve
