Swedish Beetroot Salad

this dish is traditionally only allowed to be eaten at christmas - but is so tasty you wont be able to resist celebrating the festive cheer all year round
Ingredients:
2 x 350g jars of sliced beetroots or equivilent fresh ones
1 white onion
1 large green apple
3/4 cup light sour cream
3/4 cup light whole egg mayonaise
2 table spoons horse radish
white pepper to taste
Directions:
1. cube the sliced beetroot into small squares and place in fairly large bowl (make sure you rinse fingers straight away after to prevent staining or wear gloves)
2. dice onion into small parts about the same size as beetroot and add to bowl
3. dice cored apple with peel on into small squares same as beetroot
4. place all ingredients into bowl and add sour cream and maynaise
5. add horseradish and mix through thoroughly till all the mixture is pink
6. add pepper to taste and serve
