This is a dish my great grandmother used to make for my grandmother. It's only as an adult that I can finally appreciate it. It's peasant food, but it's kind of charming that way. I love it for breakfast with a side of fruit - really sticks to your ribs. Read more . Could easily be a nice lunch with a salad or a side dish for dinner too.
Ingredients:
1 package defrosted chopped spinach
1 1/2 c. 1% cottage cheese
1/3 c. shredded mozzarella cheese
1/3 c. shredded italian cheese
1/4 c. shredded parmesean cheese
4 jumbo eggs (or 5 reg size eggs)
1/2 c. italian bread crumbs (enough to soak up most of the moisture)
2 medium sweet apples, grated
1/4 tsp salt
1/4 tsp pepper
1/4 c. whole wheat panko bread crumps
2 tsp olive oil
Directions:
1. Preheat oven to 375.
2. Crack & whisk eggs into large bowl. Add Rest of the ingredients & mix thoroughly.
3. Spray a medium sized casserole dish (deep dish if you have it) with vegetable spray and spread mixture out evenly – not pressing down to hard. Sprinkle top with panko bread crumps and drizzle lightly with olive oil.
4. Bake for 50-60 mins until edges are golden brown and a knife comes out of center dry.
