Supreme Potato Casserole

Ingredients:
3 medium potatoes
1 cup fat-free cottage cheese (8oz)
1/2 cup reduced-fat sour cream
1 tablespoon nonfat milk
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon garlic powder
2 tablespoons sliced green onions
1/2 cup reduced-fat cheddar cheese, shredded
Directions:
1. Place ptatoes in a large sauce pan, cover with water. Cover and bring to a boil. Reduce heat and cook for 10-15min until tender. Drain, peel, and cut into cubes.
2. In a blender or food processor combine cottage cheese, sour cream, milk, sugar, salt, and garlic pwd. Cover and pulse until smooth.
3. In a large bowl mix potatoes and cottage cheese mixture and green onion.
4. Pour into a 1 quart baking dish coated with nonstick cooking spray. Bake uncovered at 350 for 30min, sprinkle with cheese and bake 15 min longer until cheese is melted.
