Supreme Brandy Burgers

These are supreme alright. One of the best burgers I've ever had that wasn't on a grill.
Ingredients:
2 shallots (or scallions) finely chopped
4 tablespoons butter
1 pound ground lean chuck
1/4 pounds boiled ham, ground
4 tablespoons ice water
1 egg slightly beaten
pinck of thyme
freshly ground pepper
flour
1 tablespoon oil
1/4 cup beef consomme
1/4 cup hiram walker apricot flavored brandy
2 more tablespoons butter
Directions:
1. Saute the shallots. Drain.
2. In a bowl add shallots and the next 7 ingredients.
3. Wet hands and shape into patties; refrigerate for 1 hour.
4. Dust patties with flour; saute' until in oil until cooked and keep warm in oven.
5. Add consomme', Apricot Brandy, and cook 5 minutes. Add butter and pour over patties. Sprinkle with parsley
