this spicy concoction is a take on my wife's chili recipe. i took it up a notch with the ingredients and spices to kind of confuse the tastebuds.(in a good way) all you'll need to add are some corn muffins and you've got a meal.
Ingredients:
32 oz. pinto beans
1 green bell pepper
1 red bell pepper
1 yellow onion cut in medium chunks
1 red onion cut in medium chunks
3 jalapenos diced
3 garlic cloves diced
1 cup of celery
2 tbsp. red pepper flakes
1/4 cup of brown sugar
1 tomato diced
1 small can of tomato paste
Directions:
1. simmer beans for 1 hr. do not drain all of the liquid.
2. slowly stir in each ingredient.
3. bring the mixture to a boil, then simmer over low heat for 15-20 mins. be sure to stir at the midway point
4. salt and pepper to taste.
