Mom's recipe instructions are very cryptic, so this is a guessipe to me. We ate this a lot at her cocktail parties and there was never any left.
Ingredients:
1 package of chopped spinach, defrosted and squeezed dry
1 cup of chicken stock
fresh ground black pepper, more pepper, more better
4 to 6 dashes of your favorite hot sauce (texas pete here)
1 cup each of three white cheeses, your choice as long as one of them is white cheddar.
1 1/2 tsp of cornstarch tossed with each cup of white cheese
1 cup of half and half
2 tsp of garlic powder
Directions:
1. Heat the stock in the top half of a double boiler, add the hot sauce, garlic powder, black pepper and stir in the spinach.
2. Keep stirring and add handsful of each cheese that was tossed with the cornstarch.
3. Stir slowly until each handful melts.
4. Stir in cream, heat gently.
5. Adjust seasoning for spiciness, adjust to taste.
6. Serve with bread cubes, pretzel rods, blanched veggies; whatever floats your boat.
