Super Tasty Italian Sausage Subs

My daughter and I had been busy running errands all day. We stopped by the grocery store to pick up something for dinner. I wanted something simple and quick to fix and my daughter wanted something flavorful. This is what we came up with.
Ingredients:
1 tablespoon olive oil
2 italian sausages (i used becco's sausage which is locally made)
1 medium onion, sliced thin
1 red bell pepper, sliced thin
4 slices provolone cheese
2 sub rolls
4 tablespoons sun-dried tomato pesto
Directions:
1. Heat olive oil in frying pan.
2. Saute onion and pepper until onion is transparent and softened.
3. Remove vegetables to a plate and set them aside.
4. Add sausages to pan and fry on medium heat, turning from time to time, until sausages are no longer pink and are almost fully cooked.
5. Return vegetables to pan with sausage and cook together until sausage is fully cooked.
6. Meanwhile, spread 2 Tbs. of the pesto on to each sub roll and top with provolone cheese.
7. Place a hot sausage in sub roll and top with onions and peppers.
