Super Sneaky Sausage Rolls

A great treat you can pack it with vegies and anything goes. Just adapt to suit what you have in the house. They freeze well and you can use any combo of vegies and herbs you like even a handful of grated cheese. Add some seeded mustard or worcestershire sauce or any other flavourings to your/the kids taste. If your kids are extra fussy puree onion , garlic and herbs in with vegies. Otherwise you may wish to soften onion slightly before using in recipe so the taste is not as strong.
Ingredients:
500 g mincemeat (you can use 1/2 and 1/2 sausage and beef mince or all sausage or beef mince)
1 egg, lightly beaten
1 medium onion, diced
1 -2 garlic clove, crushed
2 tablespoons chopped herbs (such as thyme, oregano, and parsley)
2 cups pureed mix of raw vegetables (such as broccoli, zucchini, carrot, cauliflower, mushroom, spinach, beans, peas and corn)
1/3-1 1/2 cup breadcrumbs
4 sheets puff pastry
milk, for glaze
Directions:
1. Preheat Oven to 180°C
2. Using your hands combine mince, egg, onion, galic, vegies and herbs. Gradually add enough breadcrumbs to ensure mix is not too wet. It will depend on the water content of the vegies you have used as to how much crumbs to use.
3. Halve sheets of pastry and form logs of mince mixture to place down the centre of each piece of pastry.
4. Roll pastry around mince logs. Cut each log in 2cm intervals to make mini sausage rolls. Place mini rolls on baking trays. Pierce top of rolls once with fork and brush with milk.
5. Bake 20-30 mins until golden and puffed.
6. NOTE: You can freeze uncooked rolls to cook and eat later if you make too many. Be sure to thaw thoroughly before cooking though.
